As you all know, I try different recipes from all over the world and share my experiences with you people, and you all love that. One thing that is different about this blog is that I experiment with recipes and bring you the best. I tell you what will happen when you change this recipe in many ways.

So, keeping the story short, today we have started a new series in which I will try different Southern recipes. First of the series, I will try Nashville styled hot chicken recipe.

Let’s Start:

Wings are the favorite for all. We love wings, and almost all fast-food chains offer them. The difference is the style of cooking and spices we will use in the recipe. Think of your favorite wings from the favorite brand (suppose Popeyes wings), this recipe will not be like that, but you will find a different and even better flavor. So stay tight with me.

Ingredients:

Following is the list of ingredients. Let’s classify these ingredients for your ease:

For Marination:

  1. Chicken Wings: 3 lbs
  2. Poultry Seasoning: 2 tbs (Tablespoons)
  3. Onion Powder: 1 tbs
  4. Cayenne pepper: 2 tbs
  5. Hot Sauce: ⅓ of a cup
  6. Buttermilk: 4 cups

For Batter and Frying:

  1. Self-rising flour: 4 cups
  2. Garlic Powder: 1 tbs
  3. Celery salt: 1 tbs
  4. Onion Powder: 1 tbs
  5. Vegetable Oil (for frying)

For Nashville Sauce (The real Hero):

  1. Brown Sugar: 2 tbs
  2. Cayenne Pepper: 2 tbs
  3. Garlic Powder: 1 tbs
  4. Sweet Peprika: 1 tbs
  5. Chilli Powder: (as needed)
  6. Red Pepper Flakes: 1 tbs
  7. Hot Vegetable Oil: ½ Cup

  • The poultry seasoning I used is Chef Paul’s. If you can find it, that’s cool. Or you may use any other product as per availability and your taste.
  • There are many Hout Sauces available. Use what you usually use. Do not experiment with that, as it can largely change the flavor of the final dish.
  • I used Battar Pro Bowl for mixing, which I think is the most convenient and the most effective way to do so.
  • Use fresh vegetable Oil for the best smell while frying.
  • DO NOT Change anything in the Nashville Suace recipe. You can not experiment with that. It’s a real game-changer. Are you thinking of changing something? I repeat! Do not do it. NO, A Big NO!
  • If you cannot find self-rising flour, then use all-purpose flour and add baking soda to it.

Meat lovers can try this recipe. This is the special recipe of meatballs that every meat lover will love.

Instructions:

The recipe will take 8 hours and 15 minutes in total, 8 hours of marination time and 10 to 15 minutes for frying the chicken. So this is not a lengthy dish. You can win hearts with the least of the efforts. Here is the complete set of instructions, step by step:

Marinate

  1. Start with the chicken in the bowl, and add all the spices one by one. After adding spices, keep mixing until the spices are well mixed with the chicken wings.
  2. Very important suggestions for juicy and flavorful chicken wings are to make cuts on the chicken pieces so that the mixture can be well mixed. 
  3. Refrigerate overnight or for 8 hours. The recommended time is 8 hours but you have to do it for at least 4 hours.

Batter & Frying

  1. Take a bowl, mix flour with onion powder and garlic powder.
  2. Put marinated chicken wings one by one in the flour and use a batter pot bowl to mix them well.
  3. Heat the vegetable oil to 350 degrees Farenhite in a frying pan or in a deep fryer. (I recommended using a deep fryer as wings will be fried perfectly and crisply in that.
  4. Each wing will take 8 to 10 minutes to get ready in the frier. Check for the golden color of the fried wings, and when ready, take them out.
  5. Keep the wings on the wired rack to take out dripping oil from it.

Nashville Hot Sauce

  1. In a bowl, mix all the dry spices mentioned in the ingredients. Make sure the bowl is heat-resistant because hot oil will be poured in these spices.
  2. Carefully pour in the hot oil.
  3. Mix it well, so all the spices are well mixed in the oil. Do not use too much oil, use as much as is stated.
  4. Use a brush to paste the sauce on the chicken wings; this will enhance the flavor of the wings.
  5. Enjoy these yummy and flavorful wings.

Dipping sauce with Yogurt and Mint:

Now here is the experimentation from my side with the dish. The dish is perfect in itself; therefore, no main experimentations can be done with the main dish. So I created the dipping sauce that fits well with the recipe. Here is the recipe for this dipping sauce:

Ingredients:

  • 1 cup fresh mint leaves (washed)
  • 2 tbsp curd (for grinding)
  • 2 cups thick curd (chilled)
  • 1 tbsp powdered sugar
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black salt
  • 1 tsp roasted cumin powder
  • 1/2 tsp red chili powder
  • 1 cup cumin seeds (for roasting and grinding)

Steps to Make It:

  • Add the washed mint leaves to a blender. Mix in 2 tablespoons of curd and grind into a smooth, creamy paste. Avoid adding water to keep the texture thick and rich.
  •  Heat a pan on a low flame and add cumin seeds. Roast them while stirring continuously until aromatic and slightly darker in color. Let them cool, then grind into a fine powder. Store extra in an airtight container for later use.
  • Take 2 cups of chilled, thick curd in a bowl. Add powdered sugar and whisk well until smooth and creamy.
  • Add the prepared mint paste to the whisked curd and mix thoroughly until well combined.
  • Add salt, black salt, roasted cumin powder, and red chili powder. Mix everything together until evenly blended.
  • Your creamy dipping sauce is ready. Serve it chilled as a refreshing side dish to balance out spicy meals.
